Power-Packed Kale Salad

If you’re a follower of healthy food blogs, veganism or just like kale; chances are you’ve heard of a Massaged Kale Salad. If not, it’s basically this: you make a homemade dressing and massage it into raw kale until the dressing breaks down the bitterness and stiffness of the kale into a savory, still-crisp salad. Pretty simple, but pretty delicious. Don’t fear the kale; it holds up well in recipes, is an amazing superfood and has a rich flavor (for a green thing).

Speaking of superfoods, this salad packs in avocado, flax oil and sunflower seeds; all  nutritional powerhouses. With the decadence of the holidays coming, keep this health dynamo in your back pocket, you’re going to need it.

Avocado & Massaged Kale Salad (Vegan)
2 tbs flax oil*
1 tbs lemon juice
1 avocado, peeled and chopped
1 tsp Sea Salt
1/2 tsp garlic powder
Pinch of cayenne pepper
4 c. cleaned, chopped kale (ends trimmed)
2 tbs sunflower seeds

Note: I love the walnut-like flavor of the super healthful flax oil, but you can certainly use vegetable or olive oil.

In a large bowl, whisk together the flax oil, lemon juice and half of the avocado until smooth. Add sea salt, garlic powder and cayenne and stir to combine. To the dressing add the kale. Massage the dressing into the kale with your hands, making sure to coat each leaf completely. Taste, add more salt/cayenne as needed. Allow kale salad to marinate for about 10-15 minutes.Sprinkle the remaining avocado over the top, along with sunflower seeds. Serves 2.

Serving suggestion: Serve alongside a Curried Brown Rice Pilaf with Raisins and Almonds for a completely vegan meal.
