I’ll say it: National holiday on a Wednesday? WORST THING EVER.
Just when you’re relaxing your mid-week worries away, it hits you like a ton of bricks that you still have DAYS worth of work to do. So uncool, calendar, so uncool.
I spent my day celebrating our nation’s freedom at a friend’s grill-out. Our host is an amazing chef; and the menu (and potluck items from other friends) did not disappoint.
Although everything looked amazing, I sampled the following:
-Asian Beef Salad: Crisped beef over an avocado, cucumber, romaine salad – although I skipped the beef (insert “where’s the beef” joke here)
Mediterranean Chickpea salad: Chickpeas, zaa’tar, onions and other delicious things
-Homemade Potato Salad: So simple and so darn good
-Roasted Suckling Pig: Oh yes, our host roasted an entire suckling pig – it was
exceedingly tender; and yes, I doused mine with hot sauce and devoured it. Fantastic.
-Roasted Zucchini and Summer squash
-1/2 perfectly charred bratwurst
It was all so good! I enjoyed a few more bites here and there throughout the party as I ended up staying well into the evening, challenged the host to a push-up contest and learned quite a few dirty words Italian (what? a push-up contest?), so you know, I re-worked up an appetite.
I contributed the following to the festivities:
Watermelon, Feta and Mint Salad
This is very similar to this salad, but slightly tweaked:
- 1/2 medium watermelon, cubed
- 8oz feta, crumbled
- 1 small pkg (3-4 stalks) mint leaves (roughly chopped)
- Zest and juice of one small lime
- 1 tsp sugar
Combine all ingredients well in a large bowl; allow to sit for about 1/2 hour.
Serves 10 easily as a side dish.
All in all, a great Fourth of July.
