Some of you may be drinking coffee and calling that breakfast or eating a little packet of sugary instant oatmeal and calling that breakfast all in the name of “fast and convenient.”
I’m here to say, eating an easily prepared, protein-filled breakfast is within your time-crunched reach. Speaking as someone who’s often searching for wayward keys, blow-drying her hair and keeping one eye on the wildly entertaining Matt Lauer in the 10 minutes before I’m due to the leave the house; I know from time-crunched mornings.
This entire frittata took 8 minutes to make. Seriously. Take that, 30-minute whatever.
Egg White, Scallion and Parmesan Breakfast Frittata
1/2 carton Liquid Egg White (shake well before using)
Sea Salt and Freshly Ground Pepper
4 Stalks of Cleaned Scallions
1/4 c. Shaved Parmesan Cheese
Lightly spray a 4-cup microwave safe glass bowl. Pour egg whites into bowl; and liberally salt and pepper. Whisk briskly until foamy. Using kitchen shears; snip the scallions right into the egg whites (green and white parts). Whisk again. Bake in the microwave for 6 minutes; until center is set. Remove bowl from microwave (using potholders; bowl will be hot). Flip frittata onto a plate, then using a second plate; flip right-side up. Add shaved Parmesan. Serves 2.
No time to actually eat your masterpiece? Simply slice a piece; wrap in tin foil and eat like a burrito as you run for your train (not that I have any experience with that).
